CCE Putnam Offers Community Food Preservation Classes

Brewster, NY – June 10th 2023 - Cornell Cooperative Extension of Putnam County is offering two food canning classes designed for community members with limited financial resources. On June 27th, Cornell-trained Master Food Preservers will teach how to make jam from seasonal fruits; and on September 12th, how to properly preserve late-season produce, including tomatoes. Both classes will use water-bath canning techniques based on small-batch recipes requiring only basic equipment found in most home kitchens. Classes cost $5 each.

Home canning can extend the shelf life of fresh produce, reduce food waste and help manage the summer’s bounty. But preserving those succulent ripe fruits and vegetables must be done properly to preserve the safety and quality of the food. Improperly canned food can result in pathogens entering the jars, with dangerous results. By learning the proper techniques for food preservation, County residents eager to save money by growing their own produce or buying it on sale can extend the shelf life of fresh food that might otherwise go bad. Knowing what and when to buy in bulk is part of the game plan.

Classes will be offered at Tilly Foster Farm from 5:15- 8:15PM. Registration is prioritized for community members with limited financial resources.
